Olive wood is a very hard, dense wood due to its slow growth and is about 60% harder than oak wood.
Olive wood has a very special but subtle odor of its own. It smells a little sweetish with a hint of olive oil scent. The naturally relatively high oil content in the wood prevents odors from settling in the wood.
Olive wood is extremely resistant to moisture, so it does not become rough or brittle.
It always feels always smooth to the touch.
Since the manual processing is focused on the natural olive wood, it creates together with the beautiful grain very attractive individual pieces.
Every single piece is therefore unique.
The wood of the olive tree is hygienic and resistant to acids, fats, or bacteria and does not absorb liquids and odors. It preserves the flavor and aroma of the food.
In addition, the hardwood is gentle on your knife blades and leaves very little cutting marks. Exposure to high-temperature variations can cause the wood to work and crack.
